5 Cozy Slow Cooker Meals for the Holiday Season

The holidays get busy fast, and on the coldest evenings I want dinner to feel like a warm hug. Between twinkle lights, gift wrapping, and evenings spent watching my favorite seasonal movies, I love having a slow cooker meal bubbling away in the background. I've never been much of a cook, so crockpot meals are kind of my thing but I've always notice that not all crockpot recipes are winners. These five recipes are my go-to cozy dinners for December; simple, comforting, and perfect for chilly nights that call for something warm and homemade.

These recipes will produce tons of leftovers (if you're a two person household like me). If you are like me and can't always eat leftover right away I definitely recommend freezing portions. I recently started doing this because I have to stretch every dollar out, and its actually the smartest thing I've done in the last several months.

1. Slow Cooker Creamy Chicken & Thyme

Ingredient Amount
Chicken Breasts2
Cream of Chicken Soup1 can
Chicken Broth1 cup
Butter1 tbsp
Dried Thyme1 tsp
Peas1 can, (optional)
Black Pepper1/2 teaspoon
Salt1/2 teaspoon

Instructions:

  1. Add chicken to the slow cooker.
  2. Mix broth, soup, butter, and thyme; pour over chicken.
  3. Cook on LOW 6–7 hours or HIGH 3–4.

2. Holiday Beef & Mushroom Stew

Potatoes4-5 potatoes, diced
Onion1 small onion, sliced
Chicken Broth1/2 cup
Paprika1 tsp
Garlic Powder1 tsp
Worcestershire Sauce2 teaspoons
Black Pepper1/2 teaspoon
Salt1/2 teaspoon

Instructions:

  1. Add everything to the slow cooker.
  2. Toss to coat.
  3. Cook on LOW 6 hours or HIGH 3.

Egg Noodles2 cups, added at end

Instructions:

  1. Add everything except the noodles to the slow cooker.

Black Pepper1/2 teaspoon
Salt1/2 teaspoon

Instructions:

  1. Add the vegetables to the bottom of the slow cooker.
  2. Place the roast on top.
  3. Pour in the broth and onion soup mix.
  4. Cook on LOW 8–9 hours or HIGH 4–5.
  5. Serve warm with the broth spooned over top.
